I’m not ready to say goodbye to smoothies and smoothie bowls just yet, especially when there are so many delicious ways to take them into the fall and winter months. (It’s amazing what a few apples and some pumpkin pie spice can do to a dish.)
We’ve been enjoying such great weather around here lately, even up here in the mountains, so ice cold meals still sound a-ok to me right now. I also love smoothies and smoothie bowls because they have so much flavor and energy packed inside a convenient (and pretty to look at) little package.
And I need concentrated energy and nutrition right now because apparently homeownership is the fastest track toward developing actual tricep muscles. I’ve never had a strong upper body and between all of the hauling and painting, my arms have never felt more jello-ey. (Coming soon: Michelle Obama arms.)
With fiber and energizing carbohydrates from apples and healthy fats from coconut yogurt, pecans, and chia seeds, this smoothie bowl will help you power through even the toughest of home improvement projects…or whatever else happens to be on your agenda today.
And can we please just talk about spirulina – and the amazing blue-green hue – in this fall smoothie bowl? I love adding spirulina powder to smoothies and smoothie bowls primarily because I just really dig this color.
Yep, I totally judge my food by how it looks.
In addition to its looks, spirulina is also packed with nutrients and antioxidants.
I talked a lot about spirulina and it’s health benefits in my spirulina energy bites post, so be sure to check it out if you missed it and/or want to learn more about using spirulina powder in your own kitchen. Nutritionally, I love it because it contains protein, iron, beta carotene, and essential fatty acids.
The Perfect Spirulina Powder I used in this recipe is vegan, gluten-free, 100% USDA organic, non-GMO, and free of the additives that are hiding out in so many nutritional products out there.
There’s only one ingredient in this powder: organic spirulina, and that is all.
