Healthy eating and moving don’t exactly go hand in hand. There just aren’t a ton of healthy whole food recipes that can be prepared amongst piles of boxes, without tools and appliances, and using only that tiny little sliver of energy that remains after the whole moving ordeal. This challenge left my husband and I searching for whichever food establishment would feed our exhausted selves the fastest. We ended up with pizza. It was good…but I really just wanted a regular home-cooked meal made from fresh ingredients. What I needed was a collection of delicious healthy recipes for moving – meals and snacks that are easily prepared in advance or require minimal kitchen equipment to put together.
