I finally just couldn’t take it anymore and had to pick up a pint of fresh strawberries at the store this week.
Fresh berries, fresh herbs, sunshine – it’s definitely beginning to feel like spring.
So, naturally, I had to celebrate with a smoothie bowl.
I’ve been adding fresh mint to my smoothies a lot lately and couldn’t pass up the opportunity to pair it with my first fresh strawberries of the year. There’s something so refreshing about mint – it really makes me feel awake, recharged, and ready to take on the day.
(And how could my day not be fantastic when it begins like this?)
This smoothie bowl is filled with the good stuff too.
Two varieties of frozen berries (strawberries and wild blueberries) for antioxidants, fiber, and energy in the form of healthy carbohydrates. Rolled oats for more healthy carbs, soluble fiber, and immune-boosting beta-glucans. Chia seeds for healthy omega-3 fats and plant-based protein.
Don’t you love indulging in a sweet breakfast that’s also great for you?
But don’t let me box you in with the breakfast talk because I also happen to believe this smoothie bowl would make an amazing dessert. (And don’t count it out for Mother’s Day brunch either.)
The fact that its ready in less than five minutes is just an added bonus.
I’m telling you, you can’t lose with this one.
As always with smoothie bowls, feel free to choose your own favorite toppings. I went with (of course) my fresh strawberries, coconut, chopped almonds, and a few extra fresh mint leaves.
But I’m already beginning to dream about variations with granola, more fresh berries, cashews, and/or goji berries.
Luckily, there’s a whole lot of time left for fresh berries and smoothie bowls.
- ½ cup frozen strawberries
- ½ cup frozen wild blueberries
- ⅓ cup oats
- 1 tbsp chia seeds
- 2-4 tbsp fresh mint leaves
- ¾ cup milk of choice (I used unsweetened almond milk)
- 1 tsp honey or maple syrup (optional)
- Toppings: sliced fresh strawberries, fresh mint leaves, unsweetened coconut flakes, chopped almonds
- Add smoothie ingredients to blender and blend until smooth.
- Transfer smoothie to a bowl and add toppings of choice before serving.
