Yep, we polished these little suckers off before we even left the house - I'm telling you, they're just that irresistible.
And so incredibly easy too. I make energy bites all the time and typically just toss in all the nuts, seeds, and dried fruits I can get my hands on, but this time, our pantry was a little lacking.
I was forced to keep things simple - 5 ingredient simple. Thankfully, I had just enough dates and almonds to get the job done and they make up the majority of this simple healthy snack.
Along with dates and almonds, just three more simple plant-based ingredients: chia seeds for omega 3's and fiber, plus a dash of antioxidant-rich matcha green tea powder and vanilla extract for flavor. It's kinda amazing how delicious 5 simple whole foods mashed together can be.
Simple ingredients and all-natural energy support make these easy matcha bites a must-have for your next road trip or busy day away from home. Warning - if you're prepping ahead of time, you'll probably want to make it a double batch.

5 Ingredient Matcha Energy Bites
Ingredients
- 1 cup almonds
- ½ cup pitted chopped dates
- 2 tablespoons chia seeds
- 1 teaspoon matcha green tea powder
- 1 teaspoon vanilla extract
- Pinch salt
Instructions
- Add ingredients to food processor or high-speed blender and pulse 6-8 times or until mixture begins to stick together when pressed. Separate about a tablespoon and use your hands to roll into a ball and set aside. Repeat until dough is completely used. Allow to set in the freezer for at least 30 minutes before enjoying. Store in the fridge for up to one week.
