Have you noticed all the kombucha cocktails popping up on menus and around the interwebs lately? We don't do a whole lot of mixed drinks around here (mostly because Dan keeps about 35 bottles of beer in his "cellar"—quotations because said cellar is actually the closet in our extra bedroom), but this whole kombucha concept seemed too good to pass up.
We're not totally new to the trend. A friend kindly made us a batch of ginger peach kombucha for our wedding a few years back. We added whiskey and called it a cocktail. Original trendsetters? I think so.
Regardless of how long they've been around, I had two thoughts before getting into my latest mixology venture: 1) ginger is hands down the best kombucha flavor and the only way to make it better is to add peach, and 2) it tastes a lot like the ginger beer that's used to make a traditional Moscow mule.
And so the Ginger Peach Kombucha Moscow Mule was born.
This cocktail starts with half a fresh peach. The riper the better. I just squeezed it over the copper mug the same way I'd juice a lime. In my opinion, it's fine if some of the pulp falls in, but if you care, you can run it through a strainer first. I used GT's Gingerade ginger kombucha, but if you can find a ginger-peach flavor, that'd be delicious, too!

- 2 ounces vodka (optional)
- ½ ripe peach juiced (yields 2-3 teaspoons juice)
- 1 tablespoon lime juice (½ medium)
- ¾ cup ginger kombucha (such as GT's Living Foods Gingerade)
- Peach slices
- Mint sprigs

Fill a copper mug with ice and stir in vodka, peach juice, and lime juice. Fill mug with ginger kombucha and stir to mix.

Garnish with peach slices and mint sprigs (if using).
Best enjoyed fresh.
