I was asked to participate in the #TasteTruvia campaign and created the recipe for these Whole Wheat Scones as a member of the Healthy Aperture Blogger Network. I was compensated for my time.
Remember when I told you guys that I was going to try really hard to learn how to bake in 2017? ...

So I've been hard at work and I have to say, I think I have at least one (albeit small) area of baking covered - scones! And not just any scones. These babies are whole grain, low in sugar, and filled with bright and seasonal citrus flavors.
Whether you have diabetes or just want to cut back a little bit on sugar following holiday indulgences, you will love these citrus scones, which are sweetened only with fresh fruit and Truvia, a calorie-free natural sweetener made from the sweetest, best-tasting part of the stevia leaf. Because they're also made with whole grains and seasonal fruit, these Orange Cardamom Scones are the perfect way to start a balanced day with nourishment and energy.
By the way, before you start feeling too impressed by my baking skills, let me just clear something up...these scones could not be easier to make. Step one: dump dry ingredients in a bowl. Step two: stir together wet and combine. Step three: Bake. Step four: glaze. Step five: savor every bite. You can do it too, promise.
Actually, I think I'm kind of starting to like this whole baking thing. Sure, I need to dig out the measuring cups and (gasp) actually follow a recipe...but it's all kind of worth it to pull something so warm, delicious, and homemade out of the oven as these zesty whole wheat scones.

- Scones:
- 2 cups white whole wheat flour
- 1/4 cup Truvia Natural Sweetener
- 1 tablespoon baking powder
- 2 teaspoons cinnamon
- 1/4 teaspoon cardamom
- 1/4 teaspoon salt
- 1/2 cup softened butter or vegan butter substitute
- 1/2 cup unsweetened almond milk or milk of choice
- 1 tablespoon orange zest plus 2 tablespoons fresh orange juice zest and juice from about 1 large orange
- 1 large egg or 1 flax egg, see notes
- 1 teaspoon vanilla extract
- Glaze:
- 1/4 cup unsweetened almond milk or milk of choice
- 1/4 cup Truvia Natural Sweetener
- 1 tablespoon orange zest plus 2 tablespoons fresh orange juice zest and juice from about 1 large orange
- 1 teaspoon cinnamon
- 1/8 teaspoon cardamom

Preheat oven to 400ºF and prepare a baking sheet.

Prepare the scones. Combine flour, Truvia, baking powder, cinnamon, cardamom, and salt in a large mixing bowl. In a seperate bowl, whisk together the softened butter, milk, orange zest and juice, egg (or flax egg), and vanilla. Gradually add wet ingredients to large mixing bowl of dry ingredients, stirring throughout. Mix until dough forms, using hands if needed, and spread dough on a flat surface to about 3/4" height. Slice dough into 8 triangular pieces and spread on baking sheet. Place on center rack of oven and bake until golden brown, about 20 minutes.

In the meantime, prepare the glaze. In a small saucepan over medium heat, whisk together milk, Truvia, orange zest and juice, cinnamon, and cardamom. Bring to a simmer and cook over low heat 7-10 minutes. Remove from heat and set aside.

Remove scones from oven and allow to cool before drizzling with the glaze and serving.
To prepare a flax egg: whisk together 1 tablespoon ground flax with 3 tablespoons water and allow to thicken for 10-15 minutes or until consistency similar to a beaten egg is reached.

These scones and are SO GOOD. WOW. I normally have good self control but I accidentally ate two right away. The cardamom + orange combo is perfect, and the ratio and balance was great. I ground my own cardamom seeds because I had them, and it is delicious so I'd recommend if you have them. I used flax egg, plant-based butter, agave in the scones, and maple syrup in the glaze and it all came out great.
