Staying hydrated during the summer is a must, but there are times when plain ice water just isn’t going to cut it. On those days, this Sparkling Blueberry Hibiscus Iced Tea will come to your rescue.
I’m always looking for ways to add more variety and interest to mealtimes, but I only recently started giving my non-alcoholic beverages the same attention. It’s our first summer in the house, and I’ve been soaking up each and every ray of Colorado sunshine available to me from the front deck.
There’s something about our peaceful surroundings that calls for a refreshing summer beverage made with a little extra care and intention. Plus, you can’t go wrong adding fresh blueberries to just about anything—especially this time of year.
Hibiscus tea has been a long-time favorite of mine—I can’t get enough of its perfectly tart and floral flavor—but this Blueberry Hibiscus Iced Tea has taken my affection to a whole new level. Muddled berries, fresh lemon, and grated ginger have that kind of power over me.
This colorful sparkling iced tea is a delicious way to cool off and rehydrate when it’s extra hot and sunny out, and it’s equally perfect for both summer parties and quiet afternoons on the deck with a good book. - 1 cup filtered water
- 2 hibiscus tea bags I used Paromi Hibiscus Berry Tea
- 1 cup fresh blueberries substitute with frozen blueberries or berry of choice
- 1 liter bottle sparkling water (about 4.25 cups)
- 1 lemon sliced into wedges
- 1 tablespoon honey substitute with agave nectar or sweetener of choice
- 1 teaspoon fresh grated ginger optional
- Bring 1 cup water to a boil, remove from heat, and steep the tea bags in the hot water for about 5 minutes, or as directed on the tea package. Remove the tea bags and set aside.
- Add blueberries to a large jar or pitcher and muddle slightly with a masher or fork until you have released some of the fruit juices. Add hibiscus tea, and stir in remaining ingredients. Transfer to the fridge to chill for about 10-15 minutes. Serve over ice.
This recipe may be prepared in advance, but will lose carbonation over time.
