I'm a sucker for any new type of fruit or veggie. So I was super excited to get a package of Zespri's new SunGold Kiwifruits in the mail the other day. They're currently in season and they smelled so amazing (and no fuzz?!) - I couldn't wait to try them out.

The verdict? (And I'm not just saying this...)
They were so sweet, juicy, tropical...the definition of refreshing. (I later learned that Zespri uses a measure called the "brix" to produce the sweetest, best-tasting fruits. High-brix kiwis also stand up to storage best.)
So, apparently, it wasn't just my imagination.
On it's own, kiwifruit is a great source of energy-providing carbohydrates. It also contains fiber, folate (a B vitamin), vitamin C, potassium, and vitamin E.
With the addition of coconut and cashews, you'll get a healthy snack that's also balanced with fats and protein.
I love having these kiwifruit cups for a sweet snack but they'd also be perfect for breakfast, an appetizer, and dessert.
Kiwis are just good anytime of the day.
(And did I mention these guys are also ready in ten minutes and perfect for summer entertaining?)
Toasted Coconut SunGold Kiwifruit Cups
Ingredients
- 3 Zespri SunGold Kiwifruits
- ¼ cup cashews roughly chopped
- ¼ cup unsweetened coconut flakes
- 2 tablespoons dried goji berries soaked in water for about 5 minutes and drained
- 1 tablespoon fresh mint chopped
- 1-2 teaspoons honey or pure maple syrup if vegan
Instructions
- Cut kiwifruits in half and use a spoon to scoop out fruit, leaving skin. Finely dice kiwifruit and transfer to mixing bowl. Set aside.
- Heat a skillet over medium-high heat. Add cashews and coconut flakes and toast until golden and aromatic, about 3-5 minutes, stirring often. Remove from heat and transfer to mixing bowl. Add drained goji berries and mint and stir.
- Spoon mixture back into kiwifruit skins and drizzle with honey before serving. Enjoy with a spoon right out of the kiwifruit!
