    20 Best Vegan Soup Recipes

    In need of a little comfort? These vegan soup recipes are warm, cozy, and satisfying.

    With temperatures dropping and snow falling, I've got soup on the mind. Warm and hearty bowls of cold-weather comfort. There's nothing better.

    The hearty part is important. I like the kind of vegan soup recipes that can stand on their own as a meal.

    To make vegan soup recipes more satisfying, add:

    • A mix of high-fiber vegetables.
    • A source of plant-based protein (my favorites for soup are beans, chickpeas, lentils, or edamame).
    • For extra heartiness, also include whole grains (like farro or barley) and a source of fat, such as avocado or pumpkin seeds.
    • Good flavor is also essential! I like to add plenty of garlic, herbs, and spices.

    This easy Carrot and Lentil Soup features a cozy blend of warming spices (lots of garlic and ginger!), along with rich and creamy coconut milk for added texture. Bolstered by protein and fiber-rich red lentils, this naturally vegan bowl is hearty (and nutritious) enough to serve as a complete meal all on its own.

    Using oat milk is one of my favorite ways to make creamy vegan soups without any regular cream. Here, it’s stirred into a plant-based take on corn chowder soup. Serve this spicy Southwest-inspired soup with any of your favorite toppings. I like fiber- and protein-rich black beans, avocado, salsa, cilantro, and lime wedges.

    This is another one of my favorite vegan soup recipes that utilize oat milk to amp up the creamy texture without using any dairy-based cream. The curry broth in this cauliflower soup really packs in the spicy flavor, so I like to add a dollop of vegan herb yogurt to cool things off.

Canned tomatoes are ideal for this cozy recipe, but you can also use any fresh variety while they're in season. Serve this classic comfort food soup with avocado slices, nutritional yeast, or whole grain bread to round out the meal.

Kabocha squash has a dark green outer skin and bright orange flesh that tastes similar to sweet potatoes.
