An easy, vegan rice salad with forbidden black rice, protein-rich kidney beans, mango, crunchy peanuts, and fresh cilantro.
First, make the dressing. Just mix sesame oil, lime juice, vinegar, ground cumin, garlic powder, ground ginger, cayenne pepper, and salt.
Then add all of the salad ingredients to a big bowl. There's black rice, kidney beans, bell pepper, mango, cilantro, green onion, and peanuts.
Add the dressing and toss everything together. You can prep this salad up to four days in advance, so it's great for meal prep!
