Here's what you'll need: oil onion carrots garlic ginger cumin coriander lentils vegetable broth coconut milk

Sauté the onion and carrots

Cook until the onion is translucent and the carrots are tender.

Add garlic, ginger, and spices

Stir in garlic, ginger, cumin, and coriander. Cook for about 1 minute, or until aromatic.

Add lentils and broth

Bring to a boil and cook until lentils are tender. Turn off the heat and stir in the coconut milk.

Blend half of the soup

Pour about half of the soup into a blender and blend until smooth. (This makes the final result extra thick and creamy!)

Return blended soup to the pot

Mix the blended and unblended soups together. Transfer to bowls and enjoy!

Garnish with green onions, mint leaves, and crushed red pepper flakes for added flavor and color!
