Lemon Tahini Apple Slaw
This vegan coleslaw is made with tahini (sesame seed paste) instead of classic mayonnaise.
How to Make it:
1. Whisk ¼ cup tahini, 1 lemon (zest and juice), 3 garlic cloves (minced), 1 teaspoon maple syrup, 4 tablespoons water (or as needed to thin), salt, and pepper.
2. Add 2 cups shredded green cabbage, 1 cup shredded red cabbage, 1 rib celery (diced), 1 apple (sliced), 1 green onion (chopped), and 1 ½ cups cooked chickpeas to a bowl.
3. Pour in tahini dressing and toss until evenly coated. Enjoy!
