Meal Prep Salad

This Easy Meal Prep Salad with Orange Tahini Dressing stays fresh for days, so it's a convenient, plant-based option to make ahead!

Ingredients

First, massage the kale with your hands until it's tender.

Add in  shaved  Brussels sprouts...

...and the rest of the salad ingredients: chickpeas, red bell pepper, parsley, walnuts, dried cranberries, and pepitas.

Mix the salad

Next, whisk the dressing: tahini, orange juice, olive oil, apple cider vinegar, maple syrup, garlic, ginger, and basil.

Pour the dressing on top of the salad...

...and toss it all together!

Enjoy right away or transfer to airtight containers for later. Stays fresh for up to 5 days!
