smashed potatoes


Smashed potatoes are boiled, roasted until brown and crispy, and topped with pesto sauce. They make a delicious appetizer or veggie side dish for any occasion!

First, boil 1 1/2 pounds of baby gold potatoes for 30 minutes, or until you can easily pierce them with a fork.  You want the potatoes to be nice and tender, so they're easier to smash.

Next, drain the boiled potatoes and spread them on a baking sheet. Then, use a jar to smash them until they're almost completely flat.

Preheat the oven to 450ºF. Transfer the baking sheet to the oven and roast the potatoes for 30 minutes, or until they're brown and crispy on the edges.
