Today I'm making one of my favorite high-protein, vegan snacks, Spicy Tofu Jerky.
First, press the tofu. Wrap it in paper towel and place something heavy (such as a cast iron skillet) on top for at least 30 mins.
In the meantime, mix spices: smoked paprika, nutritional yeast, cumin, cayenne pepper or chipotle powder, salt, and pepper.
Unwrap the tofu and slice into thin strips, about 1/4" thick.
Spread tofu on a flat surface and sprinkle half of the spices on top. Pat in the spices with your fingertips.
Transfer the tofu to dehydrator racks (spice side down). Sprinkle the remaining spices on top, so both sides are covered.
Cover dehydrator and set to high. Dehydrate for about 4 hours. (Dry on a baking sheet in a 250ºF oven if you don't have a dehydrator.)
4 hours later...
Store tofu jerky in an airtight container and refrigerate up to 3 days.
