Wild Blueberry + Blood Orange Smoothie with Ginger
This smoothie combines wild blueberries, fresh-grated ginger, and zest and juice of blood orange to create a refreshing fruit smoothie. Soft tofu provides creaminess and protein and ground flax adds healthy omega 3's.

2cupsfrozen Wild Blueberriesplus additional for topping if desired
zest and juice of 1 blood orangesubstitute with 1/4 cup orange juice if you can't find blood orange
1/2tspfresh grated ginger
1/2blockabout 7oz silken or soft tofu
1.25cupsunsweetened coconut milksubstitute with milk of choice
Add ingredients to blender and blend on high until smooth. Add additional milk if needed to reach desired consistency. Transfer to glasses and top with additional wild blueberries if desired.
