Goji Berry Cookie Dough Truffles

These healthy Valentine's Day treats require no baking and are filled with delicious flavors thanks to chocolate chips and goji berries.

Ingredients

  • 1 can chickpeas rinsed and drained
  • 1 ½ tablespoons pure maple syrup
  • 1 ½ tablespoons almond butter
  • 1/8 teaspoon baking soda
  • 2 teaspoons vanilla extract
  • pinch of salt
  • ½ cup dairy free chocolate chips
  • ¼ cup sun dried goji berries any dried fruit would also work
  • 2-3 tablespoons cocoa powder for coating unsweetened

Instructions

  1. In a food processor, add chickpeas, maple syrup, almond butter, baking soda, vanilla, and salt. Pulse until the mixture is well combined and creamy.
  2. Transfer the mixture to a large mixing bowl. Stir in chocolate chips and goji berries.
  3. Place dough in freezer for 30 minutes. After 30 minutes, remove and form into tablespoon-sized balls with hands.
  4. Roll in cocoa powder until coated. Store in freezer until ready to serve.
