Ingredients
Tacos:
1poundcooked jumbo shrimppeeled, deveined and thawed (about 20)
1teaspooncumin
1 teaspoonsmoked paprika
½teaspoongarlic powder
1tablespooncoconut oilmelted
1teaspoon grated lime peel
2tablespoonslime juice (1 large)
salt and pepper
1cupsliced mango(1 large)
Avocado Sauce:
1cupavocado(1 medium)
¼cupwater
2tablespoonslime juice
Optional for Serving:
Tortillas
Cilantro
Red onion, minced
Jalapeño, sliced
Instructions
Tacos:
Cut off and discard tails and transfer shrimp to mixing bowl. Stir in cumin, smoked paprika, garlic powder, coconut oil, lime peel, lime juice, and salt and pepper.
Spread shrimp in a single layer on hot grill pan (cook in batches if needed) and grill 4 minutes. Flip and cook additional 3 minutes, or until hot and golden. Spread sliced mango on grill pan and cook 2 minutes, or until hot and tender. Remove from heat and set aside.
Avocado Sauce:
Whisk or blend avocado, water, and lime juice. If consistency is too thick, stir in 1 tablespoon water (repeat as needed until sauce is easy to pour). Set aside.
Serving:
Spread tortillas on flat surface. Spoon grilled shrimp and mango on one side of each tortilla. Top with avocado sauce, cilantro, red onion, and jalapeño (if desired).
