2cupcooked wheat berries(or cooked grain of choice)
1(15 ounce can) chickpeas,drained and rinsed
¼cupchopped dried apricots
¼cupcashew halves
1cupchopped baby spinach or greens of choice
2tablespoonschopped fresh cilantro(optional)
Dressing:
2tablespoonsextra virgin olive oil
1tablespoonlemon juice
1teaspoonground ginger
½teaspooncinnamon
½teaspooncumin
¼teaspooncayenne pepper(optional)
salt and pepper to taste
Instructions
Cook grain if needed and add to large mixing bowl with remaining salad ingredients. Set aside.
In a separate small bowl, whisk together dressing ingredients. Toss dressing with salad in large bowl until mixed. Transfer to jars if desired and enjoy chilled or at room temperature within the next 5-7 days.
