Watermelon Chia Fresca
This energizing combination of fresh watermelon and chia seeds is a refreshing way to energize in hot weather.

heaping cups seedless watermelon
chopped (about 1/2 medium melon)
packed fresh mint leaves (about one 3/4 ounce package)
zest and juice
of your favorite sweetener
Mix together chia seeds and water in a large glass and allow to thicken for about 10 minutes, stirring occasionally, until a gel forms.
Add remaining ingredients to blender and blend until smooth. Add chia gel and pulse a couple times to mix. Serve immediately or chill in the fridge if desired.
