This convenient vegan sandwich is perfect for transporting to work/school and also great for camping and picnics. Made with only 7 ingredients and filling enough to serve 2. (Or 1 hungry vegan!)

Ingredients
1small sweet potatocut lengthwise into thin slices
2sliceswhole grain bread
½cuphummusstore bought or homemade, see below
½avocadosliced
Handful fresh basil
Handful sproutsI used alfalfa + radish
Hot sauce to tasteoptional, I used Sriracha
Instructions
Preheat oven to 400º F and line baking sheet with parchment paper. Spread sweet potatoes on baking sheet, sprinkle with salt and pepper if desired, and roast until golden brown and tender, about 15 minutes. Remove from oven and set aside.
Toast bread if desired. Spread hummus on each slice of bread. Top one slice with remaining ingredients and other slice of bread to form a sandwich. Cut in half if desired.
