Vegan Cheesy Roasted Chickpeas with Nutritional Yeast

1can chickpeas,drained and rinsed
2tablespoonsgrapeseed oil
2tablespoonsnutritional yeast
1teaspooncrushed rosemary
1teaspoondry thyme
1teaspoonoregano
½teaspoononion powder
½teaspoongarlic powder
Salt and pepper
Instructions
Preheat oven to 400º F and prepare a rimmed baking sheet lined with parchment paper or a silicone baking mat.
Dry the chickpeas thoroughly with paper towel or a clean kitchen towel. Transfer to a medium bowl, and stir in oil, nutritional yeast, crushed rosemary, thyme, oregano, onion powder, garlic powder, salt, and pepper.
Spread in a single layer on baking sheet and transfer to center rack of oven. Cook 20-25 minutes, or until chickpeas are crispy and golden.

Storage: Let roasted chickpeas cool completely before storing. Keep them in an airtight container at room temperature for up to 3 days. For best texture, store them loosely covered. Avoid storing them in the fridge, as this can cause them to become chewy or soggy.
Reheating: If roasted chickpeas soften over time, reheat in the oven at 375ºF for 5–10 minutes to crisp them back up.
