Ingredients
¼cuptahini
1clovegarlicgrated or minced
1teaspoongrated lemon peel(optional)
2tablespoonslemon juice
1teaspoonmaple syrup or honey(optional, see note 1)
Whisk tahini, garlic, lemon peel (if using), lemon juice, maple syrup or honey (if using), salt, and pepper.
If dressing is too thick, stir in 1 tablespoon of water. Repeat as needed until desired consistency is achieved. (The exact amount of water varies depending on the texture of your tahini. I typically use 2 tablespoons.)
Notes
Vegan: Use maple syrup instead of honey, or omit the sweetener completely.
Making ahead: Prepare dressing up to 1 week in advance.
Storage: Store in a jar or airtight container in the refrigerator for up to 1 week. Stir before serving. If dressing is too thick, gradually stir in a small amount of water until desired consistency is achieved.
