Inspired by my favorite coffee shop order, this bacon avocado croissant sandwich is flaky, savory, and deeply satisfying. Made with crispy bacon and melted Swiss cheese (with a vegetarian option included), it's a flexible meal that balances richness with freshness and works well for breakfast, brunch, or lunch.

Instructions
Air Fryer Bacon Instructions:
Place bacon in a single layer in the air fryer basket. Cook at 375 degrees Fahrenheit for 7 minutes, or until crispy. If using plant-based bacon, follow the package instructions.
Top the bacon with Swiss cheese and cook an additional 30 seconds, or until melted. Open and close the air fryer slowly to prevent the bacon and cheese from shifting. You may need to gently adjust the cheese placement once it starts melting.
Oven Bacon Instructions:
Preheat the oven to 400 degrees Fahrenheit and arrange the bacon in a single layer on a lined baking sheet. Bake for 15-20 minutes, or until crispy. If using plant-based bacon, cook according to package instructions.
Top the bacon with Swiss cheese and return to the oven to cook for an additional 2 minutes, or until melted.
Assemble Sandwich:
Spread mashed avocado on the bottom half of the opened croissant, and spread aioli on the top half.
Layer sliced tomato and spring mix on top of the mashed avocado.
Transfer the cooked bacon and melted Swiss cheese to the croissant. Close the sandwich and slice it in half if desired.
Notes
To warm croissant:
Air Fryer: Place croissant in the air fryer basket and cook at 300ºF for 2 minutes, or until warmed.
Oven: Preheat oven to 350ºF and place croissant on a baking sheet. Transfer to the oven and bake 5 minutes, or until warmed.
Stovetop: Melt butter in a skillet over medium heat. Slice the croissant in half lengthwise and place cut-side down in the skillet. Cook 2 minutes, or until warmed.
Making ahead and storage: This sandwich is best assembled fresh for optimal texture. If you need to store leftovers, wrap tightly and refrigerate for up to 1 day. Reheat in the oven or air fryer at 350ºF until warmed through.
