Bacon Avocado Croissant Sandwich (with Vegetarian Option)

This Bacon Avocado Croissant Sandwich is flaky, savory, creamy, and packed with layers of flavor. Crispy bacon, melted Swiss cheese, mashed avocado, garlic aioli, juicy tomato, and fresh spring mix are stacked inside a warm, buttery croissant for a satisfying sandwich you can make at home in under 30 minutes. I'm including both air fryer and oven instructions for perfectly crispy bacon, plus a vegetarian bacon option if you prefer a meatless version.

This is the kind of breakfast, brunch, or lunch sandwich that feels like a cozy coffee shop meal, but it's simple enough to make in your own kitchen.

Bacon Avocado Croissant Sandwich with Swiss cheese.

This recipe is inspired by one of my favorite local coffee shop orders. For a long time, it was the sandwich I'd crave...and also second-guess.

I used to think that if I considered myself "vegetarian," I shouldn't want bacon. As if occasionally choosing a bacon sandwich meant I wasn't doing it right. But as a registered dietitian and certified intuitive eating counselor, I now look at it differently.

Plant-forward eating doesn't require perfection. Every meal doesn't need to fit into a neat box or align with a strict label. Most of my meals center around plants, and sometimes I enjoy meat because it tastes good and feels satisfying. Both can be true.

That flexibility is something I help clients build in my 1:1 work. Moving away from rigid food rules and toward a grounded, nuanced approach to eating is often what allows meals to feel steady and sustainable instead of restrictive or extreme.

Ingredients

Labeled ingredients to make a bacon avocado croissant sandwich.

You'll need a buttery croissant, thick-cut bacon or plant-based bacon, sliced Swiss cheese, ripe avocado or avocado mash, garlic aioli (store-bought or homemade-I like this easy mayo-based version), fresh tomato slices, and a handful of spring mix or baby spinach.

The croissant provides a rich, flaky base that crisps beautifully when warmed. Bacon adds salt and crunch, while Swiss cheese melts smoothly for a nutty, creamy layer. Mashed avocado brings richness and balance, and the zippy garlic aioli ties everything together with a savory kick. Tomato and spring mix add freshness and contrast to keep the sandwich from feeling too heavy.

Open-faced bacon Swiss avocado croissant sandwich. Labeled 4.

Transfer the cooked bacon with the melted Swiss cheese to the croissant. Close and cut in half if desired.

Top Tip

If you're using an air fryer, close it slowly to prevent the bacon and cheese from shifting. You may need to gently adjust the cheese placement once it starts melting.

Substitutions and Variations

  • Vegetarian: Use a store-bought plant-based bacon. Tempeh bacon also works well.
  • Cheese swaps: Try provolone, white cheddar, or dairy-free cheese.
  • Add an egg: A fried or soft-scrambled egg makes this even more filling.
  • Extra crunch: Add thinly sliced red onion
  • Spice: A drizzle of hot honey or chili crunch sauce adds contrast.

Making Ahead and Storage

This sandwich is best assembled fresh for optimal texture.

If you need to store leftovers, wrap tightly and refrigerate for up to 1 day. Reheat in the oven or air fryer at 350ºF until warmed through to restore crispness.
