The hearty part is important. I like the kind of vegan soup recipes that can stand on their own as a meal.
To make vegan soup recipes more satisfying, add:
- A mix of high-fiber vegetables (here’s what’s in season during fall and winter).
- A source of plant-based protein (my favorites for soup are beans, chickpeas, lentils, or edamame).
- For extra heartiness, also include whole grains (like farro or barley) and a source of fat, such as avocado or pumpkin seeds.
- Good flavor is also essential! I like to add plenty of garlic, herbs, and spices.
